From harvest to hope: Jeff-Tech’s home canning project turns seasonal abundance into year-round meal

In Ghana, where fresh produce often spoils before reaching families, the Moringa Community Organization introduced a simple yet powerful solution: home canning.

What began as a small training session in the Jeff-Tech vocational classrooms has grown into a movement of self-reliance. Mothers, students, and graduates now preserve tomatoes, mangoes, and vegetables—turning seasonal abundance into year-round nourishment.

A Story of Change

Take Ama, a mother of three. Before the project, she struggled to feed her children during the lean months. Today, her shelves are lined with jars of canned tomatoes and fruit jam. She proudly shares that her children eat balanced meals even when crops are scarce. What once felt like survival has become stability—and dignity.
